This recipe can serve 4 people as side dishes
I feel that it’s not proper to refer to this recipe as pizza, even though it’s similar to pizza. Giada DeLaurentis made this recipe and I thought that it would be ideal for a Sunday night meal.
To make this meal, you can start by using thin pizza dough. You can make your own pizza dough or you can buy one from a grocery store. You will need 1 pound of pizza dough. When I made my own pizza dough it ended up being 13.3 ounces.
You will then sprinkle the dough with gorgonzola and mozzarella. I had bought some from Murray’s Cheese on the morning that I was making cooking this food. You can lightly cook the squash and then spice it up. Squash cooks much more quickly when compared to butternut. Once the dough is cooked and the cheese on top of it has bubbled up, you can then put the roasted pieces of the squash on the dough and spread them out. Once you sprinkle some arugula, you will be good to go.
This might seem like quite a strange recipe but it’s delicious. You can make it when you want to have a light meal. Serve it with a vegetable and some salad. We also had a bit of wine with it.
- 1 acorn squash (1 pound)
- 2 tablespoons of maple syrup
- 1 tablespoon of olive oil
- 1 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon of black pepper
- 1 pound pizza dough
- 1 cup of milk mozzarella
- 1/2 cup crumbled Gorgonzola
- 1 cup arugula
- Lemon juice
Cut up the squash from the top to the bottom and then remove the seeds. Cut up the squash further into 1/3 or ¾ inch pieces and put them in a bowl. Then sprinkle it with olive oil, salt, red pepper flakes, maple syrup, and pepper. Line your baking tray with parchment paper and bake the squash for 25 to 30 minutes or until is soft and the color turns to golden brown.
Maintain the temperature of the oven at 375 degrees F. Spread out the parchment paper and then roll the pizza dough to a 13cm inch diameter on top of the paper. Then transfer the parchment paper to the baking sheet. Take the gorgonzola and the mozzarella cheese on top of the pizza dough. Bake for 25-30 minutes or until the dough cooks through and is brown in color.
Remove the skin from the squash and then put it on top of the cooked dough. Add some arugula, lemon juice, pepper, and salt. Slice it up and then serve.
